Dough
  • 0.5 cup butter, softened
  • 1 cup sugar
  • 2 eggs eggs
  • 1 cup pumpkin puree
  • 2 cups flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 2.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp ground ginger
Frosting
  • 4 oz cream cheese, softened
  • 0.25 cup butter, softened
  • 1.5 tsp vanilla
  • 0.5 tsp cinnamon
  • 2 cups powdered sugar

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar, then add eggs and pumpkin.
  3. Mix in flour, baking powder, salt, and spices; scoop onto baking sheet and bake for 12 minutes.
  4. Make frosting by blending cream cheese, butter, vanilla, and cinnamon; gradually add powdered sugar.
  5. Cool cookies, then frost and enjoy!
