  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet ingredients
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Cream cheese filling
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 egg yolk egg yolk
  • 1 teaspoon vanilla extract (for cream cheese filling)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix dry ingredients in a bowl; combine wet ingredients in another.
  3. Combine wet and dry, then prepare cream cheese mixture.
  4. Layer batter and cream cheese, swirl for marbling, then bake 60-70 mins.
  5. Cool, slice, and enjoy the fall flavors!
