Ingredients
  

Dry ingredients
  • 1.75 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
Cream cheese filling
  • 4 oz cream cheese, softened
  • 3 tablespoons powdered sugar
  • 0.5 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Mix dry ingredients in a bowl. In another, combine pumpkin, sugar, oil, and eggs.
  3. Combine wet and dry mixtures. Beat cream cheese, powdered sugar, and vanilla until smooth.
  4. Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter.
  5. Bake for 20-22 minutes. Cool before serving.

Notes

For best results, do not overmix the batter to keep muffins tender.
