Method
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- Mix dry ingredients in a bowl. In another, combine pumpkin, sugar, oil, and eggs.
- Combine wet and dry mixtures. Beat cream cheese, powdered sugar, and vanilla until smooth.
- Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter.
- Bake for 20-22 minutes. Cool before serving.
Notes
For best results, do not overmix the batter to keep muffins tender.
