Ingredients
  

Dry ingredients
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
Wet ingredients
  • 1/2 cup pumpkin puree
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Optional mix-ins
  • 1/2 cup chocolate chips or walnuts optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Cream butter, brown sugar, and granulated sugar until fluffy.
  3. Add pumpkin, egg, and vanilla; mix well.
  4. Mix dry ingredients; combine with wet mixture. Fold in optional chips or nuts.
  5. Drop spoonfuls onto baking sheet; bake 12-15 mins until edges are golden. Cool before serving.

Notes

For softer cookies, slightly underbake and cool on a wire rack.
