Method
- Preheat oven to 350°F (175°C) and line a baking sheet.
- Cream butter, brown sugar, and granulated sugar until fluffy.
- Add pumpkin, egg, and vanilla; mix well.
- Mix dry ingredients; combine with wet mixture. Fold in optional chips or nuts.
- Drop spoonfuls onto baking sheet; bake 12-15 mins until edges are golden. Cool before serving.
Notes
For softer cookies, slightly underbake and cool on a wire rack.
