Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree not pie filling
Frosting
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk or heavy cream for desired consistency
Garnishes
  • to taste chopped pecans or walnuts

Method
 

  1. Mix dry ingredients in a bowl.
  2. Cream butter and sugars until fluffy.
  3. Add egg, vanilla, and pumpkin; mix well.
  4. Chill dough for 1-3 hours.
  5. Preheat oven to 350°F (175°C), bake cookies for 10-12 minutes.
  6. Beat cream cheese, butter, powdered sugar, vanilla, and milk to make frosting; frost cooled cookies and garnish as desired.
