Ingredients
  

Dry ingredients
  • 2 cups all-purpose flour
  • 1 cup bread flour
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
Wet ingredients
  • 1/2 cup pumpkin puree
  • 1/2 cup active sourdough starter
  • 1 tablespoon olive oil
  • 1 cup warm water
Optional Topping
  • pumpkin seeds pumpkin seeds for topping optional

Method
 

  1. Mix dry ingredients in a large bowl.
  2. Combine wet ingredients until smooth.
  3. Add wet to dry, mix into shaggy dough.
  4. Knead for 10 minutes until elastic, then let rise 4-6 hours.
  5. Shape into a round, add pumpkin seeds if desired, and bake at 450°F for 45 minutes.
