Method
- Mix all ingredients to form a shaggy dough, then let sit for 45 minutes.
- Perform coil folds over 4-5 hours, then divide dough, fill with cinnamon sugar, and shape into balls.
- Place dough in floured bowls, refrigerate for 8-12 hours, then preheat oven to 500°F with Dutch oven inside.
- Score the loaves, place in Dutch oven, bake covered for 20 minutes, then uncovered at 450°F for 12-15 minutes. Cool before serving.
