Ingredients
  

Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree not pumpkin pie filling
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
Optional Nuts
  • 1/2 cup chopped walnuts or pecans
Optional Topping
  • pumpkin seeds for topping

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Mix dry ingredients in a large bowl.
  3. Whisk wet ingredients in a separate bowl.
  4. Combine wet and dry, fold in nuts if using, fill muffin cups 2/3 full.
  5. Sprinkle pumpkin seeds on top if desired, bake 18-20 minutes, cool before serving.

Notes

Do not overmix the batter for tender muffins.
