Ingredients
Method
- Preheat oven to 400°F (200°C).
- Mix dry ingredients in a large bowl.
- Whisk wet ingredients in a separate bowl.
- Combine wet and dry, fold in nuts if using, fill muffin cups 2/3 full.
- Sprinkle pumpkin seeds on top if desired, bake 18-20 minutes, cool before serving.
Notes
Do not overmix the batter for tender muffins.
