Ingredients
  

Dough
  • 1/2 cup unsalted butter, melted
  • 1/3 cup pumpkin puree
  • 1 cup white sugar
  • 2 cups all purpose flour
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • cinnamon cinnamon
Frosting
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix melted butter, pumpkin, sugar, egg, and vanilla until smooth.
  3. Add dry ingredients and form dough. Chill for 25 minutes.
  4. Shape dough into 1.5-2 tbsp balls, place on parchment, and bake for 18 minutes.
  5. Make frosting by beating cream cheese, butter, powdered sugar, and vanilla. Chill.
  6. Cool cookies, spread frosting, and sprinkle with cinnamon or pumpkin pie spice.
