Pumpkin White Chocolate Chip Cookies

Ingredients
  

Butter
  • 0.5 cup unsalted butter (1 stick, softened)
Sugar
  • 0.5 cup packed light brown sugar
  • 0.5 cup granulated sugar
Pumpkin Puree
  • 6 tbsp pumpkin puree (¼ cup plus 2 tbsp) squeezed out excess liquid
Egg Yolk
  • 1 egg yolk egg yolk
Flour
  • 1.5 cups all-purpose flour (spooned and leveled)
Spice
  • 0.5 tsp cinnamon (or pumpkin pie spice)
Vanilla Extract
  • 1 tsp vanilla extract
Baking Soda
  • 0.5 tsp baking soda
Baking Powder
  • 0.5 tsp baking powder
Salt
  • 0.5 tsp salt (decrease to ¼ tsp if using salted butter)
White Chocolate Chips
  • 1 cup white chocolate chips

Method
 

  1. Wrap pumpkin puree in paper towels and squeeze out excess liquid.
  2. Cream butter, sugars, and vanilla until combined.
  3. Mix in pumpkin puree and egg yolk.
  4. Add dry ingredients and mix until just combined, then fold in chocolate chips.
  5. Chill dough for 30 minutes, preheat oven to 350°F, then scoop onto baking sheet and bake 9-12 minutes.
  6. Cool cookies on tray 5-10 minutes, then transfer to rack to cool completely. Enjoy!

Notes

For best results, chill the dough before baking to prevent spreading.
