Main ingredients
  • 2 cups cooked chicken, shredded
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 sleeve Ritz crackers, crushed
  • 0.5 cup butter, melted
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix cooked chicken, rice, broth, soup, sour cream, and cheese; season with salt and pepper.
  3. Pour into a greased 9x13 inch dish.
  4. Top with crushed Ritz crackers mixed with melted butter.
  5. Bake covered for 30 minutes, then uncover and bake 15-20 minutes until golden and bubbly.

Notes

For a crunchier topping, add extra crushed crackers during the last 10 minutes of baking.
