Ingredients
  

Sweet Potatoes
  • 4 large sweet potatoes
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup miniature marshmallows
  • 1/2 cup pecans, chopped

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Boil, peel, and mash sweet potatoes.
  3. Mix mashed sweet potatoes with sugars, milk, butter, eggs, vanilla, and salt.
  4. Transfer to a greased baking dish, top with marshmallows and pecans.
  5. Bake for 25-30 minutes until marshmallows are golden. Cool slightly before serving.

Notes

For a richer flavor, toast the pecans before adding.
