  • 8 ounce cream cheese softened and cubed
  • 1 cup shredded cheddar cheese

Method
 

  1. Brown ground beef in a skillet; drain grease.
  2. Combine beef, onion, bell pepper, beans, corn, tomatoes, and taco seasoning in a slow cooker.
  3. Stir well.
  4. Place cream cheese evenly over the mixture.
  5. Cook on low for 6-8 hours or high for 3-4 hours, until vegetables are tender and cream cheese is melted.
  6. Stir well to combine; cream cheese should create a creamy sauce.
  7. Stir in cheddar cheese until melted.
  8. Serve hot with tortilla chips, sour cream, and green onions, if desired.

Notes

For a spicier casserole, use hot taco seasoning or add a pinch of cayenne pepper.
