  • 2 pounds frozen hash browns
  • 1 pound ground beef
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 piece onion, chopped
  • 1 packet taco seasoning
  • to taste Salt and pepper

Method
 

  1. Brown ground beef with chopped onion; drain excess fat.
  2. Mix beef, beans, corn, soup, seasoning, salt, and pepper.
  3. Layer half of hash browns in slow cooker.
  4. Spread half of beef mixture and sprinkle with half of cheese; repeat layers.
  5. Cook on low 6-8 hours or high 3-4 hours until heated and cheese melts.
  6. Serve hot and enjoy!

Notes

For a creamier texture, add a splash of milk before serving.
