Ingredients
  

Dough
  • 1/2 cup pumpkin purée
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar plus extra for coating
  • 1/2 cup brown sugar, packed
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon plus extra for coating
  • 1/4 teaspoon salt

Method
 

  1. Mix sugar and cinnamon for coating; set aside.
  2. Cream butter, sugars until fluffy.
  3. Add pumpkin, egg yolk, vanilla; beat smooth.
  4. Whisk dry ingredients; gradually mix into wet.
  5. Refrigerate dough 30 mins. Preheat oven to 350°F (175°C).
  6. Form dough balls, coat in cinnamon sugar, bake 9–11 mins.
