Method
- Mix sugar and cinnamon for coating; set aside.
- Cream butter, sugars until fluffy.
- Add pumpkin, egg yolk, vanilla; beat smooth.
- Whisk dry ingredients; gradually mix into wet.
- Refrigerate dough 30 mins. Preheat oven to 350°F (175°C).
- Form dough balls, coat in cinnamon sugar, bake 9–11 mins.
