Ingredients
  

Dry ingredients
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
Wet ingredients
  • 1/2 cup canned pumpkin puree
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
Add-ins
  • 1/2 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  2. Mix dry ingredients in a bowl; beat sugars and butter, then add pumpkin and egg.
  3. Combine wet and dry mixtures; fold in chocolate chips.
  4. Drop dough onto baking sheets; bake for 10-12 minutes until edges are golden.
  5. Cool cookies on sheets for 5 minutes, then transfer to wire racks.

Notes

For softer cookies, slightly underbake and cool on the sheet.
