Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment.
- Cream butter and brown sugar until smooth. Mix in egg, pumpkin, and vanilla.
- Stir in pumpkin pie spice, baking powder, baking soda, and salt. Gradually add flour and mix until dough forms.
- Portion dough onto baking sheets, leaving space. Bake for 12-15 minutes until puffed and set.
- Cool cookies on wire rack. Spread with cream cheese frosting if desired.
