  • 0.5 cup unsalted butter or coconut oil at room temperature
  • 1.25 cups packed brown sugar
  • 1 large egg
  • 0.75 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1.5 teaspoons pumpkin pie spice
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon sea salt
  • 2 cups all-purpose flour spooned and leveled
Frosting

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  2. Cream butter and brown sugar until smooth. Mix in egg, pumpkin, and vanilla.
  3. Stir in pumpkin pie spice, baking powder, baking soda, and salt. Gradually add flour and mix until dough forms.
  4. Portion dough onto baking sheets, leaving space. Bake for 12-15 minutes until puffed and set.
  5. Cool cookies on wire rack. Spread with cream cheese frosting if desired.
