  • 0.5 pound boneless skinless chicken breasts cubed
  • 1 red bell pepper diced
  • 8 ounces small can pineapple chunks with juices
  • Scallions for garnish (optional)
  • 2 tablespoons soy sauce or tamari for gluten-free option
  • 1 teaspoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 0.25 teaspoon garlic powder
  • 0.5 teaspoon brown sugar
  • to taste Black pepper
  • Rice for serving (optional)

Method
 

  1. Combine soy sauce, tomato paste, Worcestershire sauce, garlic powder, brown sugar, and black pepper in the slow cooker.
  2. Place chicken, bell pepper, and pineapple chunks with juices into the slow cooker.
  3. Stir to coat chicken and bell peppers with marinade and pineapple juice.
  4. Cover and cook on low for 4-6 hours, or high for 2-3 hours.
  5. Adjust seasoning as desired about 30 minutes before serving.
  6. Garnish with scallions and serve over rice (optional).

Notes

For a thicker sauce, mix a tablespoon of cornstarch with two tablespoons of cold water and stir into the slow cooker during the last 30 minutes of cooking.
