Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C). Peel, cube, and boil sweet potatoes until tender, about 15-20 minutes.
  2. Drain and mash sweet potatoes. Mix in brown sugar, milk, melted butter, vanilla, salt, cinnamon, and nutmeg.
  3. Spread mixture in a greased 9x13 inch baking dish. Top with marshmallows and pecans if using.
  4. Bake for 25-30 minutes until marshmallows are golden. Let cool slightly before serving.

Notes

For extra flavor, add a pinch of nutmeg or cinnamon on top before baking.
