Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes peeled and chopped
  • 0.5 cup brown sugar
  • 0.25 cup unsalted butter, melted
  • 0.5 cup milk
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 1 cup mini marshmallows

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Boil peeled sweet potatoes until tender, then mash with sugar, butter, milk, vanilla, cinnamon, and nutmeg.
  3. Transfer to a greased baking dish and top with marshmallows.
  4. Bake for 25-30 minutes until marshmallows are golden.
  5. Let cool slightly before serving.

Notes

For extra flavor, sprinkle with a little cinnamon before baking.
