  • 4 medium sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 large eggs
  • 1 cup pecans, chopped
  • 1/2 cup mini marshmallows (optional)
  • 1/4 cup all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C). Peel, boil, and mash sweet potatoes.
  2. Mix mashed sweet potatoes with sugar, milk, melted butter, vanilla, cinnamon, nutmeg, and eggs.
  3. Pour mixture into a greased baking dish and prepare pecan topping.
  4. Combine pecans, flour, and remaining sugar; sprinkle over the casserole. Add marshmallows if desired.
  5. Bake for 25-30 minutes until golden brown. Cool slightly before serving.

Notes

For extra crunch, add more pecans or marshmallows on top before baking.
