  • 32 oz frozen tater tots
  • 8 large eggs
  • 1 cup milk (whole or alternative)
  • 1 lb breakfast beef sausage (spicy or mild)
  • 2 cups shredded cheese (cheddar and mozzarella mix)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook sausage over medium heat until browned; drain fat.
  3. Whisk together eggs, milk, salt, pepper, and garlic powder.
  4. Layer half of the tater tots and sausage in the baking dish.
  5. Pour half of the egg mixture and sprinkle with half of the cheese.
  6. Repeat layers with remaining ingredients.
  7. Bake for 35-40 minutes until golden brown and set.

Notes

For a vegetarian option, substitute the sausage with plant-based sausage or additional vegetables.
