  • Frozen tater tots
  • Ground beef breakfast beef sausage
  • Large eggs
  • Whole milk or heavy cream
  • Shredded melting cheese
  • Fine salt
  • Black pepper
  • Garlic powder

Method
 

  1. Preheat oven to 375°F (190°C). Grease baking dish.
  2. Cook sausage in skillet, breaking into crumbles.
  3. Drain fat and set sausage aside.
  4. Whisk eggs, milk/cream, salt, pepper, and garlic powder.
  5. Arrange tater tots in dish.
  6. Scatter sausage and cheese over tots.
  7. Pour egg mixture over everything.
  8. Cover with foil. Bake for 40 minutes.
  9. Remove foil and bake 15-25 minutes, until set (160°F/71°C).
  10. Let rest 10-15 minutes before slicing. Serve hot.

Notes

For a spicier casserole, add a pinch of red pepper flakes to the egg mixture.
