  • 32 oz frozen tater tots
  • 1 pound ground breakfast beef sausage
  • 1 cup diced onion
  • 2 cups shredded cheddar cheese or your favorite cheese
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley Optional: or other herbs

Method
 

  1. Cook sausage in skillet, drain grease.
  2. Grease dish, spread half the tater tots.
  3. Sprinkle sausage, then onion.
  4. Add cheese, top with remaining tater tots.
  5. Whisk eggs, milk, salt, pepper, herbs.
  6. Pour egg mixture over casserole. Bake at 375°F (190°C) for 40-45 minutes.

Notes

For a spicier kick, use hot breakfast sausage or add a pinch of red pepper flakes to the egg mixture.
