Method
- Preheat oven to 350ºF and spray a 9×13-inch pan.
- Cook sausage in a skillet until no pink remains.
- Drain fat and crisp sausage edges if desired.
- Toss tater tots, sausage, cheddar, and mozzarella in a bowl.
- Spread mixture in the prepared pan.
- Whisk eggs, milk, salt, pepper, garlic powder, and onion powder.
- Pour egg mixture over the tater tot layer.
- Cover and refrigerate if baking later.
- Bake uncovered for 60–70 minutes, until eggs are set and tots are golden.
- Let rest for 5–10 minutes before slicing.
Notes
For a spicier kick, use a spicier sausage or add a pinch of red pepper flakes to the egg mixture.
