  • 2 lb hot breakfast beef sausage
  • 1 bag frozen tater tots (30–32 oz)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 8 large eggs
  • 2 cups milk

Method
 

  1. Preheat oven to 350ºF and spray a 9×13-inch pan.
  2. Cook sausage in a skillet until no pink remains.
  3. Drain fat and crisp sausage edges if desired.
  4. Toss tater tots, sausage, cheddar, and mozzarella in a bowl.
  5. Spread mixture in the prepared pan.
  6. Whisk eggs, milk, salt, pepper, garlic powder, and onion powder.
  7. Pour egg mixture over the tater tot layer.
  8. Cover and refrigerate if baking later.
  9. Bake uncovered for 60–70 minutes, until eggs are set and tots are golden.
  10. Let rest for 5–10 minutes before slicing.

Notes

For a spicier kick, use a spicier sausage or add a pinch of red pepper flakes to the egg mixture.
