Method
- Roast sweet potatoes at 400°F for 45-60 minutes until fork-tender.
- Cool, peel, and mash sweet potatoes until smooth.
- Mix mashed sweet potatoes with Greek yogurt, maple syrup, vanilla, cinnamon, nutmeg, salt, and eggs until smooth.
- Prepare topping by combining oats, pecans, coconut oil, maple syrup, cinnamon, and salt.
- Assemble in a greased 9×13 inch dish, sprinkle topping, and bake at 350°F for 25-30 minutes until golden.
Notes
For extra creaminess, use a hand mixer when mashing the sweet potatoes.
