  • 0.5 cup Old-fashioned oats
  • 0.5 cup Chopped pecans
  • 2 tablespoons Coconut oil melted
  • 2 tablespoons Maple syrup
  • 0.5 teaspoon Cinnamon
  • pinch Sea salt
  • 1 teaspoon Orange zest for brightness
  • 2 tablespoons Mini dark chocolate chips for extra sweetness

Method
 

  1. Roast sweet potatoes at 400°F for 45-60 minutes until fork-tender.
  2. Cool, peel, and mash sweet potatoes until smooth.
  3. Mix mashed sweet potatoes with Greek yogurt, maple syrup, vanilla, cinnamon, nutmeg, salt, and eggs until smooth.
  4. Prepare topping by combining oats, pecans, coconut oil, maple syrup, cinnamon, and salt.
  5. Assemble in a greased 9×13 inch dish, sprinkle topping, and bake at 350°F for 25-30 minutes until golden.

Notes

For extra creaminess, use a hand mixer when mashing the sweet potatoes.
