Ingredients
  

Dry Ingredients
  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
Wet Ingredients
  • 1 cup pumpkin puree make sure it's not pumpkin pie filling
  • 2 large eggs at room temp
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 375°F and prepare muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Whisk wet ingredients until combined.
  4. Combine wet and dry ingredients gently.
  5. Fill muffin cups 2/3 full and bake 18-22 mins.
  6. Cool muffins before serving. Enjoy!

Use fresh pumpkin puree for best flavor.
