Wild Rice and Broth
  • 1 cup wild rice
  • 2 cups vegetable broth
Vegetables
  • 1 cup chopped carrots
  • 1 cup chopped bell peppers
  • 1 cup chopped broccoli
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup shredded cheese (optional)
  • 1 tablespoon olive oil

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook wild rice in vegetable broth until tender, about 40-45 minutes.
  3. Sauté onion and garlic in olive oil until translucent.
  4. Add vegetables, cook 5-7 minutes, then mix with cooked rice and herbs.
  5. Transfer to a casserole dish, top with cheese if desired, and bake for 25 minutes. Remove foil, bake 10 more minutes.
